Share the homey tastes of the Pashtun food stalls on the roadside with our Mutton Dhaba Rosh, a dish that is simple, near natural and has an aromatic quality. Rosh is slow cooked to perfection and is a legacy of the traditional dhabas of Khyber Pakhtunkhwa and Baluchistan that still best represents the spirit of mountain hospitality and culinary authenticity to date.
Originally, we use the best halal mutton slices, which are selected in regard of softness and taste. These are lightly seasoned with salt, pepper, cloves of garlic and some flavorings of the spicier whole spices and cooked slowly in their own juices. The different way in which their meat is cooked (the actually dum process) keeps it tender, making it a juicy dish, with the natural fat melting into the soupy broth, and not allowing spices to overwhelm the idly stomachs of consumers.
Dhaba Rosh is not like hot curries, it is all about how clean taste is served and it is mildly spiced to exactly bring out taste of meat. The food is accompanied with potatoes and green chilies which bring in soft warmth and sweetness. It can be eaten with either tandoori naan, paratha or steamed rice with a hot serving.
It will be very suitable and ideal dish to please people who prefer to eat light but lovely tasting gravies and hence this dish will go down very well and be appreciated in the family to be served during occasions and meets during Eid or a full hearty weekend lunch.
