We start through soft pieces of mutton cooked slowly in a simmered stock of spiced mutton, with ginger fresh garlic, onion, and our traditional Nihari Masala powder. It is a special mixture of fennel seeds, star anise, cloves, cardamom, cinnamon, and nutmeg to provide the blend with rich, warm, and spicy aroma that pleases and satisfies with every bite. The resulting silky, smooth texture is achieved as the gravy is spooned over the meat, a product of the natural juices of that meat, evaporating due to the long, slow cooking.
And a nihari which is meaty, but not heavy--just right with either naan, tandoori roti or piping hot basmati rice. Garnished with fresh coriander, fresh lemon juice, and ginger juliennes, it is nothing but a replica of ancient Pakistani generosity and taste.
