Mutton Namkeen Peshawari is one of the Street legends of Khyber Pakhtunkhwa. It is reliant on fresh halal mutton, rather than a lot of spices hence, the natural taste of the meat expression.
The high quality bone in mutton is cooked slowly in Himalayan rock salt, garlic, green chilies and added black pepper. Low and slow broiling preserves the juices and makes the meat tender, juicy and flavorful. Each bite is a smack with that distinct aroma/flavor that has made this dish an iconic meal, not only in the country.
It is just right to all people who would not want excessively thick gravies and strong spices to permeate meat flavors. Either combined with freshly baked tandoori naan, or even Peshawari roti, or even just plain basmati rice.
